Ageing: 12 months in terracotta jars + 6 months in bottle
The grapes are sorted out from the grape stalks by hand; they are pressed softly without any addition of sulphur dioxide or other substances. Pressing is handmade every day. Dregs are eliminated through settling.
It has a deep ruby red with dark purple glints. Intense perfume with well-defined honey and resin glints. At first it can taste sweetish owing to the explosion of flavors given by the insulation of the jar and by the exchange with the minerals of the soil but it ends by being really dry and tannic.
